Gluten-free, Dairy-Free
Cooking fish is one of those things that people fear, but I assure you- this method is SUPER EASY. You make a delicious sweet and spicy marinade, you pour it over the salmon, place salmon in the oven, and 15 min later, YOU'RE DONE.
Servings: 3-5
INGREDIENTS:
1-1.5 lb wild caught salmon filet
2 tsp hot sauce (I like Primal Kitchens Buffalo Sauce, Yellowbird sauce, or an organic "Sriracha" works too).
2 Tbsp maple syrup
1 Tbsp cilantro, coarsely chopped
course sea salt and freshly ground pepper
zest and juice of 1 lime
WHAT YOU'LL NEED:
small mixing bowl
baking sheet
METHOD
1. Preheat oven to 425 deg.
2. Thoroughly rinse salmon and pat dry. Place filet on parchment lined baking sheet, skin side down.
3. Zest lime into small mixing bowl. Add hot sauce, maple syrup, lime juice, cilantro, and a few pinches of sea salt.
4. Pour 3/4 mixture over salmon filet. Reserve the rest for using once the salmon is served.
5. Bake for 12-15 min. Remove at 12 min if you like a less cooked salmon, 15 min if you like it more done. Garnish with fresh cilantro, course sea salt, and freshly ground pepper.
SEE... EASY!! Aside from eating filet style, you can shred the salmon and use in tacos, or even just serve it as a quick and healthy appetizer. Be sure to have the dressing on hand as a nice "dip." I like to serve with basmati rice and either a salad or roasted veg.
