Loaded Butternut Squash

Gluten-free, Paleo, Whole30, Dairy-free (optional)


If you can't tell from my recipes, I'm kinda into healthy eats that are also pretty. When our brains see pretty, it's actually a good indication that the food is healthy too (eating the rainbow). This butternut squash definitely checks both the pretty and healthy boxes, but is also super easy to make and perfect for a family or larger gathering, ahem... Thanksgiving or any holiday meal!





RECIPE


Serves 4

Ingredients


Roasted Butternut Squash

  • 1 whole butternut squash

  • 1Tbsp avocado oil

  • 1 tsp fine salt


Filling

  • 2 Tbsp grass-fed butter

  • 3-4 C greens (I use arugula and micro greens)

  • 1 apple, diced

  • 1/4 C walnuts, raw

  • 3-4 Tbsp pomegranate seeds

  • 3-4 Tbsp goat cheese, crumbled (omit if strict Paleo, Whole30, or DF)

  • salt and pepper, to taste


Equipment

baking sheet, parchment paper


Method


Preheat oven to 425 deg.


Wash and carefully slice the butternut squash lengthwise. Scoop out the seeds (I like to use my ice cream scoop for this).



Place on a baking sheet lined with parchment paper, skin side UP and bake for 1 hour.


NOTE-An extra large squash may take longer. This particular squash was quite large so I added 15 min of cook time. A cooked squash will be bubbling and browning around the edges. The skin will be soft and browned too.


Flip the squash over (skin down). Drag a spoon down the middle of the squash, creating a shallow moat (room for the filling). Again, an ice cream scoop is the perfect size for this.





Add 1 Tbsp grass-fed butter to each half. Reminder: it's important to include these healthy fats, as they slow down the absorption of carbs/sugar in the bloodstream.


Layer in the filling: first the greens, then apple, then walnuts, pomegranate seeds, and finally the cheese (if desired).


Slice to create pieces for easy serving.




NOTES:


Omit the cheese if you are strict Paleo, Whole30, Vegan, or Dairy Free.
