Spicy Creole Shrimp One Pan Meal

We've all had those nights when we don't feel like cooking. We're tired and it's just too cumbersome. We start thinking, "I'll just order in." And by the time the food arrives, we could have prepared a healthy meal, one that wasn't terribly complicated. Been there!
As a busy mom and nutritionist, I try to avoid these nights by having plenty of quick and easy meal options at the ready. Trust me, at the end of a long day, I don't want to have to work any harder in the kitchen than you do! Enter this super easy one pan meal recipe, in which the spice of the shrimp is balanced by the sweetness of the pineapple and roasted veg. You prepare/chop the shrimp and veg, you season, you bake. DONE and DONE!

Servings: 4-6
INGREDIENTS:
1.5 lbs wild caught shrimp
2 C sliced fresh pineapple
1 large red pepper, sliced
1 1/2 red onion, sliced
1 Tbsp Creole seasoning, organic (see NOTES)
1 Tbsp grass-fed ghee, melted
mineral rich sea salt (I like Redmonds)
freshly ground pepper
1/2 lemon
parsley, for garnish
WHAT YOU'LL NEED:
baking sheet with parchment paper
METHOD
1. Preheat oven to 400 deg.
2. Thoroughly rinse shrimp and de-vein. Keep tails intact if desired. Chop pineapple, red pepper, and red onion.
3. To a large bowl, add shrimp and 1/2 Tbsp Creole seasoning. Stir to coat.
4. Now add the chopped pineapple, red pepper, and red onion. Top with melted ghee, the remaining 1/2 Tbsp Creole seasoning, salt, and pepper. Stir to coat all veg and spread out on a baking sheet lined with parchment paper. Give the pan a quick once over with some more salt and freshly ground pepper. Squeeze lemon over entire sheet.
5. Bake for 15 min. If you want an extra roast to your veg, BROIL on high for an additional 3 min. Garnish with freshly chopped parsley.
6. While the shrimp pan is cooking, prepare your unrefined carb of choice. I like to prepare this with white jasmine rice in my rice cooker. Again, the idea is to keep it easy on those busy, tiresome nights!

NOTES:
I used an organic Creole seasoning mix by Healthy on You, however, you can season your shrimp with whatever you like. Most spice brands sell a ready made seafood mix, which are my go-to for dishes such as these.
