Sweet & Spicy Salmon Tacos w/Jalepeño sauce

Gluten-free, Dairy free (optional)


How to double down on Taco Tuesday: combine one of nature's superfoods (wild caught salmon) and fold it into a taco with all the fixings. Then, serve to your family for a healthy and quick meal. Wild-caught salmon gets it's superfood status from all of those brain boosting Omega-3 fatty acids. It is also a great source of protein, B Vitamins, Selenium, and Potassium.





Servings: 3-5


INGREDIENTS:


Baked Salmon Filet

  • 1-1.5 lb wild caught salmon filet

  • 2 tsp chili sauce (I like "Veracha," Yellowbird is great too)

  • 2 Tbsp maple syrup

  • 1 Tbsp cilantro, coarsely chopped

  • course sea salt and freshly ground pepper

  • zest and juice of 1 lime

Tacos

  • Tortillas- I used corn here; I also like Siete brand GF tortillas

  • purple cabbage for shredding

  • avocado slices

  • cilantro, roughly chopped

  • jalapeño slices (optional)

Spicy Jalepeno cream sauce

  • 1/2 C whole plain yogurt; (I like Strauss brand; cows are grass-fed)

  • 1/4 C avocado mayo

  • 1/2 jalapeño, no seeds, roughly chopped

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp quality mineral salt, fine



WHAT YOU'LL NEED:

small food processor -or- handheld blender

baking sheet with parchment paper


METHOD


1. Preheat oven to 425 deg.


2. Thoroughly rinse salmon and pat dry. Place filet on parchment lined baking sheet, skin side down.


3. Zest lime into small mixing bowl. Add chili sauce, maple syrup, lime juice, cilantro, and a few pinches of sea salt.


4. Pour mixture over salmon filet.



5. Bake for 12-15 min. Remove at 12 min if you like a less cooked salmon, 15 min if you like it more done. Garnish with fresh cilantro, course sea salt, and freshly ground pepper.




6. While the salmon is baking, chop the cabbage, avocado, cilantro, and jalapeño (optional).


7. Prepare the jalapeño cream sauce by adding all of the ingredients to a small food processor and blending. Alternatively, you can place ingredients in a glass jar and mix using a handheld blender. Once the tacos are made, I love pouring this cream sauce on top for an added kick.




8. Once the salmon is baked, shred it for easy taco assembly. Warm the tortillas on the stovetop and serve with all the fixings.
