Gluten-free
There is no substitute for a healthy breakfast. And when you are focused on whole food choices, a frittata is an excellent way to go. The idea behind a frittata is you can choose your preferred fillings (veg, meats, cheese), pour eggs over the top, and then bake. It's quite brilliant, really.
I like to make mine "everything" style, complete with sautéed mushrooms, onions, kale, bacon, and raw cheddar cheese. But of course you can fill with your preferred veg (broccoli, asparagus, peppers, ham, etc). The combos here are endless!
RECIPE
Serves 4-6
Ingredients
3 slices bacon
3 leaves kale, stripped from stalk
1 C chopped mushrooms (any)
1/2 C yellow onion, chopped
3 cloves garlic, minced
4 Tbsp grass-fed butter
7 eggs, pasture-raised, organic
1/2 C milk, raw (or nut milk)
1/2 C shredded cheese, raw (optional if dairy-free)
1/2 tsp salt
1/4 tsp pepper
Chives, for garnish

Cast iron pan, 10"
Method
Preheat oven to 425 deg.
Scramble the eggs, milk, salt, and pepper in a medium sized bowl. Set aside.
Prepare the filling ingredients. Start by stripping the kale from the stalk. Layer the kale leaves one on top of the other, and roll them tightly like you would a carpet. Cut in thin strips and set aside.
Chop the onion, mushrooms, and garlic, set aside.
Heat a cast iron skillet (or a skillet that can be put in the oven) on medium heat. Cook bacon until desired doneness. Drain fat, leaving a little in the pan.
Add 2 Tbsp grass-fed butter, and chopped mushroom. While mushroom is cooking, crumble the bacon.
Add onion and garlic and cook until onions are translucent, about 5 min. Turn heat to low. You may need to add more butter to keep veg from drying out. Add 1-2 more Tbsp, as needed.
Add kale. Cook about 3 min until softened. Turn heat off.
Sprinkle the crumbled bacon and cheese over the cooked veg. Pour the scrambled eggs over top. Add a sprinkling of salt and pepper.
Place skillet directly in the oven and cook 15-18 min, until egg top is puffed up and is slightly browning. Garnish with chopped chives.
I like to serve with a few slices of avocado and fresh berries. Leftovers should be placed in a sealed container, for up to 5 days.
To reheat, place slices in the oven at 325 deg for about 10 min.
